Hi, i've recently noticed that my engine temp climbs up just to 75C when riding in 5-10C outside temp. I don't know if it's the thermostat issue or it's just normal for colder outside temperatures. Any clues?

on a cold day my 04 Z1000 will run about 150 DEG F i think the thermostat opens around 135 DEG F

150F is about 65C, that's good news.

07 z1000 80f and below bke runs around 158f above 80 bike runs around 189f and in town

my bike does not like traffic, it will go over 210 deg F if i am going slow. as soon as i get over 45 MPH it comes down to maybe 170 -185. it loves to go fast. the temp always stays normal if i am going up a hill on a warm day going over 75 MPH. i hope this helps.
